My daughter is interested in prepping but my son in law not so much. My daughter was talking about how I’d always been able to feed 30 with no notice and feed us all when storms closed the roads. It’s just a matter of having simple things on the shelves. A can of beans, a can of corn, a can or two of canned tomatoes or sauce, a lb of hamburger to brown-tvp to soak and cook or a bit of jerkey to soak and throw in. Even some cooked rice to stretch it more, a diced onion or two or dried diced onions… Chili seasonings. Cook till boiling good and quickly stir in a few tablespoons of Corn meal.
Mix Corn meal and boiling water with a pinch of salt in a bowl to make a soft dough and make it 1/4 inch or a bit more bottom and sides crust. Fill with the cooked seasoned mixture. Top with grated cheese – long horn or cheddar but even Jack or mozerella is good. Some canned seedless black olives are pretty slices or chunks scattered over the top. Bake at 350° till cheese is Browning and filling is setting up. Still almost runny is still ok but I like mine more like a thick stew. Serve with a simple salad or cooked wild greens. It can easily feed a crowd or a houseful of hungry teens. No exact measurements so it’s easily stretched with beans, cooked rice, more corn et. Just season it to taste good. A lack of meat won’t be noticed if part of the seasoning is beef or chicken bullion. I’ve baked this with rabbit drumsticks in it. Everyone cleaned their plate.
