It’s been a lazy few days around the Topaz household. Thanksgiving it was just 3 of us as my daughter went east to her cousin’s wedding. We had a ham (spiral cut that really just needed heated), with homemade everything else: sweet potato casserole, mashed potatoes, spinach balls, rolls. Yum. Yesterday I used part of the leftover ham to make and freeze ham rolls. I made 3 meals for hubby and I and then 4 meals for my son. He lives in an apartment style dorm and when I can I make things and put them in our freezer and he can pick them up when he is ready for them. Today, hubby cut most of the meat off the bone and has a ham and swiss cheese quiche in the oven for dinner. He has enough chopped ham and grated swiss cheese to make another quiche later, that will go in the freezer. The hambone is in a ziplock baggie for soup. We still have ham in the ‘fridge for sandwiches.
Friday, hubby and I went Black Friday shopping and I picked up hats, gloves and scarves for our BOB. I also ordered up some freeze dried food for our food storage.
Tomorrow when our daughter is home, we are going to bake the turkey, along with homemade mashed potatoes, gravy, scalloped corn, spinach balls and vegetable lasagna cupcakes. Any leftover lasagna cupcakes will go home with our daughter to freeze. When I made the spinach balls for Thanksgiving, I made plenty and froze them before cooking. We will cook what we need for tomorrow and then package the rest up for son to take with him. I’ll take all the meat off the bone and make freezer meals: Turkey tetrazinni, turkey pot pie filling, turkey cordon bleu casserole, and others.
Monday life goes back to normal, only with probably another 12 to 15 meals meals in the freezer.
