Old Ski Bum, loved your vinyl record analogy. Here’s hoping when the needle finally stops making its circuits around the platter we all rise up with the arm, so to speak, lol.
Yesterday, the last official day of this challenge, I spent several hours doing online research about Skyr (a/k/a Icelandic Yogurt) – what it is, the two main types, how to make it at home both with or without an Instant Pot, and which retail stores in my area carry which brands of the two commercially available types (one type is coagulated using rennet, the other type is coagulated using an ultrafiltration technique). Next week I’m planning to buy some Siggi’s plain Icelandic-style yogurt and use part of it as a starter culture, along with some cheese making rennet I already have, to try making a batch of Skyr with store-bought milk. Should be a fun experiment.
I’ve really been enjoying reading everyone’s posts during this challenge and hope we can keep it going in some fashion! 🙂
