Today DH made cornbread muffins for breakfast. He likes sweet cornbread; I like mine without sugar– but they were still good. For lunch I made Cowboy Caviar, but it wasn’t from scratch– a can of black eyed peas, can of black beans, a can of diced tomatoes, a can of corn (Niblets), half a serrano pepper with the seeds and membrane taken out, some green onions, parsley and a few shakes of Louisiana Gold Hot Sauce. I would have had an avocado in there but they died in the fridge. And half a cup of Italian dressing. With tortilla chips it sure was good. Tonight is smothered cabbage with (I hope) tamales and rice. We make our cabbage usually with bacon and onions, plus the cabbage. Can’t wait!
