I am a couple of days behind. I made 2 loaves of oatmeal bread Saturday. Made Chili on Sunday with home cooked red beans, revamped the leftovers into Enchiladas last night and we are eating those leftovers tonight. Lol After raising 3 boys I have never learned to cook for two, so we eat a lot of leftovers. Fyi if you have never made it Enchilada sauce is super easy to make. I quit using a recipe years ago and make it from memory so my pinch of this , splash of that recipe is in my head. But it is over priced in the store and you can make it in about 15 minutes so it is worth learning. We have been eating what we normally eat for breakfast. We put a hog in the freezer in September so my husband has sausage, 3 fried eggs ( locally sourced) and a slice of toasted bread. I have 2 poached eggs and toasted bread. I do my toast on a griddle, so the sausage gets warmed there to. I fry up a weeks worth and reheat what I need daily. Today it was nice so I went out and pruned my grapevines back. Brutally. If they don’t do better this year I am jerking them out.
Tonight my husband replaced a relay in the hot tub controls. He didn’t make it from scratch but it is nice he can repair things without an expensive house call. It is a luxury for sure, but we have 500 gal of emergency water sitting outside. And a early morning soak everyday sure makes the old bones feel better.
