I’ve been away as my uncle has been very sick and he passed away this morning. I likely won’t be able to check in again until after the funeral. Due to hubby and I cooking for 10 even though we only have 6 in the house, we had so many leftovers that we’ve been eating leftovers for lunch and dinner. Sunday, we did cook a new meal but that was because we had all the kids, in-laws, and grandkids over for hubby’s birthday. Everything we made was from meat and veggies we had put up ourselves (steak, potatoes cut into chunk fries, beans) and of course, we had to have a cake! The kids brought over salad and the stuff to make homemade guacamole. Oh and I had homemade bread already baked up from last week. Even the kids commented on how much food there was and one said, well, it wouldn’t be dinner at the parents if there wasn’t too much food. So yeah, more leftovers. I think I can finish up the steak by making fajitas tomorrow night (or Saturday, depending on the funeral stuff). Though, last night we did make a crock pot venison roast with the rest of the potatoes we didn’t bake Sunday and the carrots that were in the upstairs fridge, and the last of the onion that one of the kids brought over with some homemade bread. We season with garlic, herbs, salt, and pepper.

Breakfast is usually a combination of toasted homemade bread with butter or soft goat cheese or guacamole,  oats cooked with molassass and cinnamon.

Wednesdays are baking day. Today, I’ve baked 4 loaves of loaf bread, 2 pizza crusts, 1 batch of pretzels, a batch rolls, and a batch of buns. I was going to try to make pasta but I’m not going to have time to cook it tonight and I want to cook it fresh. So this is put off until after the funeral. We will eat with the family at my cousin’s house tonight. To be honest, probably even tomorrow night. Thankfully, I froze the leftover steak so I don’t have to worry about it going bad while we are away.

Youngest son, made more guacamole today. He is so happy to have learned how to make it. Me? I’m happy that one of the kids can make something on their own lol

Other than all that, I’ve been catching up on household chores that I didn’t do while I was sick and continuing to make & take my herbal medicines.
