Made Spaetzle with mushroom sauce today. My son’s fav noodles. It’s an old Southern German recipe…uses flour, eggs, salt and water. We have 5 (very old) chickens, so have an egg or two per day . My good old Amish Spaetzle maker broke, so I had to do it the old way…with a wooden board and a long knife. I always make any sauce myself..never actually used “sauce” in a package. All you need is melt some butter in a pan, add 1 TS of flour, mix while cooking, add milk or whipping cream..and cook while stirring for a min or so, until it’s thick, then add salt, pepper, garlic, maybe soy sauce..and whatever else you want, like mushrooms.
