This has been a meal prep day for me. I’ve been assembling sausage biscuits for the grands to have for breakfast before school. I also had a request to make more of those “awesome” breakfast burritos. I only have a pound of sausage left so the next batch of burritos will have diced ham and cheese with egg. I made some extra biscuit dough for freezer biscuits. They are super easy to make and WAY cheaper than the store bought ones my daughter is used to buying. Next I need to work on filling the cookie jar for afterschool snacks. Chocolate chips were on clearance after Christmas so I stocked up. This challenge has really shown me a lot of $$s that have been wasted on things we should be making at home. I always used to cook this way when my girls were little. I don’t know why we got away from it. We’ve eaten better for far less money than we have in quite some time. Anyway supper tonight will be leftover soup. I’ve collect any veggies or meat that’s less than a serving in a freezer container. Once it’s full the whole thing goes in a pot of water adding whatever bits and pieces I want to save from dying in the back of the fridge and maybe some onion and whatever seasoning I think it needs.
