MamaCando…here’s the recipe for Keto Cheeseburger Meatloaf I tried from Karrisa Longs’ Clean Keto Lifestyle: serving size for 1

6 oz ground beef
1 egg, beaten
1/4 medium white onion, diced
1 teaspoon Himalayan Pink salt
1 teaspoon garlic powder
1/4 cup cubed cheddar cheese
2 tablespoons tomato paste
1 tablespoon yellow mustard
1 tablespoon coconut animos

1. preheat oven to 350, line baking pan with parchment paper
2. combine ground beef, egg, onion, salt, garlic and cheese
3. mix gently with hands (over mixing will make meat loaf tough)
4. form into loaf shape, put on pan and into oven for 30 minutes
5. Whisk together tomato paste, mustard and coconut aminos and spread evenly on top of meat loaf; bake for an additional 15 minutes. (If you’re not total Keto, you can substitute regular soy sauce for the coconut aminos)

I guess you can increase the amounts for an additional servings but the 6 oz ground beef made a fairly generous loaf for me…but then I don’t eat a whole lot of food at any one meal. I’m seriously working on cutting carbs out of my diet and have definitely noticed a major difference in how my tummy feels….not so much heartburn…

Grannyjsmith…I hear you about slow going in getting chores completed…I think my decluttering efforts have paid off in somehow keeping housekeeping chores to a minimum….well, perhaps there’s a bit of dust here and there…but what’s the old saying about dust – it protects fine furniture, or something like that…

Grandchild number 8 spent night with me last night so I made scrambled eggs, sausage and cinnamon rolls for breakfast…more than I usually do but she needs to eat before going to school…it’s fun having her here to break the sameness of my days..plus, at 11 years old she is a major computer/electronics nerd so I save all my questions or problems that need solving for when she comes…:) she attends a private Christian classical school so she is being trained to carry on intelligent conversations about life, issues, policy matters, ethics, philosophy…fun to pose interesting questions to her and hear her responses…

Good to see OldMansd back home safely and on line…and OldMtWoman, what have you done to your arm? Sure hope it’s a temporary thing. I’m definitely going to try to do some vertical gardening this year…will make it easier I think for me to manage standing up rather than stooping down and trying to figure out how to get back up…harvested a few more little baby spinach leaves today, almost enough for a small salad…that little effort at growing something makes me smile…and at my age I am determined to concentrate on things that make me smile, no matter what the storm going on about me might be! Yeah! I figure if I’ve made it this far, I’m tough enough to see it through to the end with a smile…hugs to all ya’ll for adding to my smile quotient!!!
