Spent the day defrosting and inventorying the deep freezers. Took out 30 pounds of chicken leg quarters and 4 packs of split breasts that need to be canned to give us some freezer space. Also got out some frozen cherries and berries that will make pie filling and jam. We got two 8 piece packs of fried chicken for free at the grocery store. Brought them home and made rice and gravy to go with and added some peas and carrots for veg.
Jan 23rd
Tonight we’re having homemade Salisbury steaks with mashed potatoes and gravy. Home canned greens for veg. Daughter is finally getting on board making cheddar biscuits to go with. After supper I’ll be canning up the chicken I took out of the freezer yesterday. It’s going to be a late night but it has to be done. The family has enjoyed the variety of home cooked meals a lot more than they thought they would when I began the challenge. I’ve enjoyed the savings. Not running out for frozen pizza or packaged junk really appeals to me.
The past couple of nights I’ve been able to put a few “tv dinners” in the freezer for lunch at work. I already had some divided microwave containers. Pulled them out of storage and made a couple of meals each night after supper. Nothing is going to waste and it’s super easy to pull one out on the way to work.
