Needed to do something with the cut up veggies from taco night and little bits of veggies from last couple of dinners . So I decided to make vegetable soup. Then DH said Why don’t you throw the left over beef I had cooked (about 4 slices) into it. Put a small can of beef stock into the pot, diced up the meat and added a can of sauerkraut w/juice to the pot, the chopped tomatoes, Borlati beans(type of Italian kidney beans) w/ their liquid. Peeled and diced one Russet potato and threw that in the pot as I thought it was a bit salty from the kraut. Then I used the “Better than Bullion mix for Beef with a cup of hot water to add some more flavor. Simmered on low for about 2-3 hours, covered. DH said it was very good and had 3 bowls of it. I still had enough soup to put into 2 quart jars for another couple of meals. Cleaned the fridge out pretty good..Tonight is pizza night. Am trying a low carb,Keto recipe for the dough. DH is on a LOW carb diet and tries to stick to about 135-150 carbs a day for his diabetes. It’s been tough trying to make things he’ll eat. SO Far I found a couple of recipes for crackers, tortilla chips and bread. We usually eat pretty healthy but when you’re watching the carbs it’s a little tough.
