I started reading on my phone, decided to join up when I could get to computer, started sprouts, asked a friend to teach me how to knit socks, (we already ate very little pre-made food so that part was going to be easy) and then I slipped on the ice where I thought there was ground so I will be dealing with my own January challenges and am not even going to offer an invitation to anyone else to join me :).

But I wanted to reply to Cinnamon Granny’s request for vegan cheese and felt so bad that I hadn’t been able to respond to two separate requests she made.

BUT my all time favorite is from a recipe in a cookbook for my instantpot  It uses cauliflower and my (not even a vegetarian) son kept going back for more. I don’t use all the seasonings she uses, just the carrots, cauliflower and cashews (which I’m fairly certain you could steam until veggies are soft and cashews are pliable -if you don’t have an instant pot or pressure cooker) and the tomatoes, salt and nutritional yeast.  I don’t even use Ro-Tel tomatoes- just canned, diced ones.  to me the flavor was reminiscent of the Velveeta dip my mom made ages ago.  The book is <span style=”text-decoration: underline;”>The ultimate vegan cookbook for your instant po</span>t by Kathy Hester.  It is so good that if I never made anything else from the cookbook or in my instant pot it would still be one of my best purchases ever!  Ask your library to get it through inter-library loan.

I copied some recipes from various posts on the forum for non-food items and when I am functioning again will add them to my activities  Right now I’m a one-handed typist and can’t do many things I did before but I am getting by and that’s what it’s all about in the long run)

I’m just glad we still have hospitals and surgeons and this forum is all just a challenge, not a real life disaster.
