You are right, I have not posted. I am reading your posts via email and forgetting to check-in. I have been saving your ideas and recipes/directions in a document appropriately names “January Scratch Challenge. We continue to cook from scratch each day: homemade pancakes, homemade bread, homemade stir-fry, making new dishes from our pre-canned foods. And a big one-using foods that are in the large freezer! I discovered a ham!
To Columbia River. Thank you for the link to Vegan Cheese. Since this is “Veganuary”, an attempt by the vegan community to invite non-vegans to enjoy their lifestyle, I have found many recipes that sound delicious. Most of the cheese recipes use raw cashews to make it creamy, plus nutritional yeast. Our grocery carries neither and we are 30+ miles away from any “healthy” store that does. Hubby has asked local store employees to search and they have no idea what he is talking about. I like the idea of the one you posted with cauliflower, especially the dip aspect of it. As soon as we get into the big city again, I am searching for more appropriate ingredients.
Perhaps Columbia River can answer a question, though: do the cashews need to be raw? Will just normal salted, store-bought cashews work?
I am continuing to crochet. I have made three hats, one pair of mittens, and a scarf – above what I posted before. My problem with the hat patterns is the yarn I have is not the same gauge as called for in the pattern. So, according to time and stitches, I probably made three times more hats that I finished because I had to keep taking them apart to get the right size. I am saving the “best” for last. My daughter wants lined, flip-top mittens. For that I will need to concentrate.
Meanwhile, I am spending part of every day listening to Morse Code. I am trying to learn it and using an online course, The Ham Whisperer, as my teacher. Hubby just smiles when I drum on the arm rest trying to remember the differences between letters such as R .-. and W .– and K -.- . This is slow going. But, we are retired and it is a cozy thing to do while sitting near the wood stove. He is working on his next level license, General.
Meanwhile, I have finished mending that has been sitting around since last winter and clearing the sewing room so I can finish a corduroy shirt that I started last winter.
Plus, I am seeing things through new eyes and saying, “I don’t need to save that.” and trying to stay away from the hoarding aspect of my behavior. (I am a neat hoarder, though, except in the sewing/craft room.) I have passed boxes on to Hubby to finish the pare down of documents we have not looked at in ten years – recycle or shred.
So, for a February Challenge, I suggest a Pare Down. We must find at least one item a day to recycle, sell, donate, pass on, etc. A box of papers to recycle, or a box of clothes, would be just one item. It could be the chess-board challenge. lol We would have nothing left by the end of the month.
