Whoops! I posted yesterday’s check in under the decluttering forum. That’s a great conversation also, so you might want to check it out. I’m hoping February’s challenge might center on getting rid of stuff.

Thanks, OldMtWoman for notes on where to store dehydrated stuff. Today, I’m seeing how my dehydrated carrots work in muffins. So far, it’s looking good. With some boiling water for about 15 minutes, the shredded carrots looked great. Yeah! Now I know dehydrating my cabbage and carrots will definitely be worth the effort. For those of you with lots of experience in the kitchen, my excitement at actually being able to do something that works may seem a bit silly, but for me it’s a major accomplishment as I’ve never spent much time doing cooking things. I was a single mom of three boys and after they were raised and out of my nest, food was mostly eating out or quick stuff. So, this new hobby is providing me a much needed interest to keep on keeping on with living! Good news: number 2 son just sent me a message asking about helping him with some long-term food storage ideas. One of his teen age daughters has shown a real interest in homemaking skills so I figure he’ll get her involved. She already cans, cooks, sews, raises chickens, etc.

Anyhow, back to dehydrating…I’m going to fill the trays with more carrots, a head of cauliflower, some spinach, some yellow onion slices, sliced mushrooms and a bag of frozen lima beans and see what happens.My goal is to get as many things preserved this way to avoid freezer requirement. In our neck of the woods, it is not uncommon in the rural area where I live for severe ice storms to knock out power for several days at a time. In recent memory we were out for nearly two weeks. Lots of folks lost a lot of stuff. Anyhow, I’m thinking dehydrating and canning mostly for long term storage.

So sorry to hear how the weather is affecting so many. Our temps dipped really low last night so schools were closed, but supposedly by Saturday we’ll be back up into the 60s. Actually, we will begin to experience Spring around here in about 6 weeks….I love having the full four seasons….not too terribly long for winter or summer…Fall and Spring just great.

We seem to have a broad age spread among us…that’s cool…I love reading about MollyM’s closet drama….and OldMtWoman is a great story teller! Okay, carrot muffins are out of the oven and cooling…they look yummy so it’s time for a snack. Maybe a cup of tea….
