Greetings, All.

Well, the sorta blizzard we had yesterday severed the rope on a bird feeder making the squirrels happy since the feeder was on the ground this morning.  We were between two fronts and did not get much snow or wind.  While we were lucky, Rochester, MN was not.  Roofing was either blown off structures or collapsed from the weight of snow.

Speaking of snow, bad Preppers here.  We only have one snow shovel, and that is wearing away.  On our list for the next trip to a box store – if there are any left.

I just added the recipe for Tuscan Bean Soup to the recipe file. (It is from Emeril Lagasse to give proper credit.)  You all told me to add zucchini to soups and this is the one I added it to.  We really enjoyed the soup.  By eliminating the pancetta it is easily made vegan. You can also grow the ingredients yourself.

Unfortunately, I made my Veganuary Recipe doc too large and it will not open.  So, I must redo it.  I was able to copy the recipe list from page one and will pursue each recipe one at a time as I make it. I hate to lose hours of work.

Experiment: I made a broccoli soup yesterday – without the cheese.  Looking at it, it was very, very green, I doubt I would have eaten it as a child.  However, with the chickpeas and potatoes, celery and parsnips in it, it was healthy and the seasonings made it tasty.  Hubby added cheese to his.  I used broccoli greens from the freezer, plus the tops.  I don’t like chard, it tastes like beets which I do not care for.  So, I plant kale, and use all of the broccoli.

I spent some time online looking for lentil seeds. They are really difficult to find. Amazon came through with several sources; one red and one green.  I also found white carrot seeds.  Since Hubby cannot eat carrots, I thought maybe it was the orange carotinoid.  A friend had some white carrots and he could handle those.  So, I will plant white carrots this summer.  This is also a difficult seed to find with few choices.   I wonder if there are nutritional differences among the white carrot, orange carrot, and parsnip-which is my normal substitute.  No need to plant them all if not since parsnip just does not grow well for me.

Time for me to do some snow shoveling.
