Hi Muffy – it’s good to see you back!
Today my prep is gathering vegan recipes and a pantry list from a site with vegan recipes intended for Lent (Byzimom.com). The site also has a pantry list that really sparked my prepping imagination. Going through it, I noticed that most of the things on the list would not have to be refrigerated (I am working on eventually going grid-free, so not having to have much of a refrigerator would be great). The list includes mostly dry beans, seeds, and grains as well as dried fruits and vegetables. I have made my own tofu and tempeh in the past and know that the production can be staggered so that you do not have to refrigerate, or refrigerate very little. My mind is busy figuring it all out.
So I am printing recipes and making a list based on the pantry list – I already have much of what is there anyway. Then we’re planning to finally go to the Amish discount store tomorrow morning and see what we can find. I will also have to figure out the nutrition components, too, for 2 diabetics and another person with gluten-intolerance.
I also need to look into clamping as a refrigeration substitute – was told today that it is a constant 52 degrees just 6 inches below the ground. Going to have to verify that, however.
