    Mix 1 egg w/ 1Tbsp sugar and 1Tbsp corn oil. Add 1 can of cream style corn and mix in enough Plain yellow corn meal (approx 1 1/2 cup) to make a very thick batter. ( make sure the batter is pretty thick)
    Drop large spoonfuls into hot oil, turn when golden brown.
    Serve with maple syrup or powdered sugar, fresh fruit etc.

    Tips: *don’t add too many to the hot oil too quickly as it cools the oil fast.
    *option: add chopped onions

    Yummy! You can also drain a can of chili peppers and stir it into your batter.

    My mom used to make corn fritters quite often when I was a kid. I remember having them with fried apples, and maybe pork chops? I was not much of a fan of mom’s pork chops, as she would buy the thin ones and cook them for an hour in the oven until they were so dry they would pull away from the bone. But the fritters and fried apples were excellent! Thank you for the recipe.

    Sounds great, HM, but I would have to skip the sugar and corn oil. Maybe substitute some organic local honey to replace the sugar and EVOO or even organic lard for the oil. I’ll give this a try.
