    Economical Meat Recipe from Maine by Never Give Up

    Shin bone of Beef crack the bone

    Put meat in kettle and cover with cold water and bring to boil. Add salt and pepper, 2 tablespoons of vinegar, 1 large onion, sliced and cook until meat falls from the bone.

    Skim out the meat and bone and boil down the liquid to half by boiling quickly.

    Pick the meat into small bits, removing all particles of bone.

    Strain the liquid through muslin and add a pinch each of powdered mace, cloves, cinnamon and all spice, ½ teaspoon of mustard, a dash of cayenne and ½ teaspoon of celery salt.

    Bring liquid and spices to a boil and put the meat back into it. Mix thoroughly. When very hot turn into a earthen bowl which has been rinsed in cold water and cover. Put a weight on the cover and set away to cool. Serve the next day.
