Ok, so this is a mix of the base King Authur recipe and my own modifications.

I swapped out the black pepper for Chipolte pepper, and added a ¼ more sharp cheese to the initial mix.
Using cast iron muffin/biscuit pan, I only filled it about ¾ to the top.
Then followed the rest of the King Author recipe.
Dang are these good!
Can only think how much better could they be with either pre-cooked bacon, or sausage to make a quick and easy breakfast on the go.
