    Eventually sugar runs out so here are some WW1 “sugarless” recipes that were prize winners

    Most of the US get their sugar from sugar beets, not cane and in either case it’s quite a process to make sugar from beets. This is why we store other forms of sugar or raise bees and tap maple trees

    Maple Perfect by Mrs J W Spamer

    4 eggs beaten slightly

    Pour over them slowly ½ pint maple syrup. Cook until mixture thickens, Cool, then add1 teaspoon almond extract and 1 pint thick cream, which has been beaten until stiff. Mold, pack in salt and ice and lets stand 4 hour (in other ward stash it in the frig for 4 hours)
