    So as things progressed under rationing more items became rationed tighter and tighter. Knowing how to stretch limited Items now will give you more time to get used to The idea of what you can do with less of during hard times now and give you a better idea of what to put aside more of now

    War-Time Ginger Bread Irma Cornell

    1 cup molasses

    ½ cup boiling water

    2 cups flour

    1 teaspoon baking soda

    1 ½ teaspoon of ginger

    ½ teaspoon salt

    4 tablespoons shortening melted

    Add water to molasses, mix and sift dry ingredients and stir into liquid; add shortening and beat vigorously for several minutes.

    Pour into shallow pan and bake 20 and 25 minutes in moderate oven, remembering that ginger bread scorches readily

    Cut in squares and serve hot with molasses sauce

    Boil cup of water with 2 tablespoons of butter substitute for 5 minutes. Take from the fire and stir in 2 tablespoons of lemon juice. Serve at once.
